The University of Parma hosts more than 32,000 students and 996 teaching staff and researchers. It is currently organized into 9 departments and 25 research, training and service centres. 

 

Main Role:  

The University of Parma will study enzymatic technologies for specific hydrolytic processes aimed at valorising by-products deriving from slaughterhouse residues and from the production of soy-based beverages. The University of Parma will perform a detailed characterization of protein hydrolysates after enzymatic hydrolysis.
